Let’s start in France…
CHICKEN MARENGO
1 Frying Chicken (4-41/2 LBS)
Cooking Oil
Salt and Pepper
10 or 12 Small White Onions
1/2 LB of Mushrooms
1 clove of Garlic
2 Cups of Tomatoes -solid pack or fresh ones
1 Cup Stock (or chicken bullion)
Cut the fryer into serving portions and brown gently in hot oil. Add seasonings and vegetables; cover the pan and cook in oven at 350 degrees until the chicken is tender (about 1 1/2 hours).
Remove the chicken to a warm platter and to the skillet add 1/2 cup stock and 1/2 cup white wine (that’s the french touch).
